I love the wines of Patrick Sullivan but I tend to favour his red/rosé wine more than his whites. This however doesn't mean that I wouldn't try his new white cuvée, Waterskin, which is made from his recently purchased estate grown fruits and is a blend of Sauvignon Blanc and Sémillon with slight skin contact.
Tasted in Mark Thomas, the 2018 evoked white and yellow fruits along with herbal scents. Bright and fruity but lacking a little bit of that vibrant energy that I typically find in his "Rain" or "Amazon" cuvée. Enjoyable and a great thirst quencher but it's missing that slight edge that seems to be the case with the majority of Aussie natural white.
