📷 @functional.foods I know you all have been waiting for these SALTED DARK CHOCOLATE PEANUT BUTTER & JELLY CUPS for the last month. Well, they’re finally here and decadent AF. This recipe is , gluten, dairy, soy, and refined-sugar free.
To make the SALTED DARK CHOCOLATE PEANUT BUTTER & JELLY CUPS, you will need:
• 1 cup @navitasorganics cacao powder
• ½ cup organic virgin coconut oil, melted
• ¼ cup 100% pure maple syrup
• 1/2 cup creamy organic peanut butter (can also do almond or sunflower butter)
• 1/3 cup raspberry chia jam
• @redmondrealsalt unrefined sea salt
• Large or small baking cups (for muffins/cupcakes)
Combine cacao powder, melted coconut oil, and maple syrup in a medium mixing bowl and stir until consistency is smooth.
Line a muffin pan with parchment baking cups and evenly divide chocolate mixture into the base of each baking cup.
Note: Make sure the mixture is warm/hot when pouring into baking cups since cooled chocolate mixture will be thick and hard to pour.
Next, add peanut butter to a small bowl and mix with ~2 tbsp almond flour to thicken it up (should have consistency of watered down play-doh). It also helps to refrigerate the peanut butter before hand so it’s not as runny and holds shape (in this case, add half amount of almond flour). Add peanut butter on top of bottom chocolate layer.
Next, add a dollop of raspberry jam atop the peanut butter and spread evenly. Fill the rest of the cups with remaining melted chocolate (may need to reheat so pours over easily). Top with a sprinkle of sea salt. Freeze for 2 hours and then store in the refrigerator. Enjoy!

Let's get back to the basics: breathe! It is so simple, we hardly ever think about it. But our breath allows us to do everything, to continue striving forward.

We had such a lovely afternoon at the beach yesterday, it felt like we were on holiday again! Which got me thinking... what is it actually about being on holiday that feels so good?
Yes it’s amazing to explore beautiful places and eat alllll the food, but what really makes you feel so good in yourself is being present. Being completely in the moment. Not worrying about all the other crap that we spend so much of our time preoccupied with in our everyday lives, only creating stress and anxiety for ourselves over something that’s already been and gone or something in the future that’s really just in our imagination.
Fully experiencing life, as it is right now.
Because it doesn’t have to be that way. We don’t have to only feel calm and happy and energised on holiday... we still need to be able to bring that feeling into our daily lives to help us cope with all the responsibilities and things we have to do.
Ask yourself... what can you do this week that you enjoy, where you feel completely present in the moment and gives you space from all the worries going on in your mind?
Know what that thing is for you, and make time for it! Time spent on your mental health is NEVER time wasted. We shouldn’t have to wait for our next holiday to really feel like we’re living our lives to the fullest 🤗

Today was just a perfect day! Family, good food, great weather we couldn’t ask for more! We had lots of detoxing with saunas and swimming (we shared a post of other health benefits from this!), lots of visiting with extended family, walks with blueberry picking, grounding from being barefoot in the sand, fresh air and I could go on! Health is all encompassing and today was so good for my mental health too!

Just over 1 year ago, I nervously got on a live call with a lady I didn’t know and who didn’t even live in the same country as me- @crystaldburchfield. She had seen a FB post I’d shared during the tail end of my #eatingdisorderrecovery from my 7 year struggle with an #ed where I shared about my new mission in life- help other women heal like I had #recoveryispossible .
We chatted for well over an hour & i remember listening to Crystal share her passion for faith and #naturalfamilyliving with essential oils- and there was an instant connection💕 Crystal was sharing about a way of life that seemed like a dream to me but one I really felt called to.
I couldn’t get the image of the life that Crystal had painted for me out of my mind, and I knew that I had to learn more about this business and understand just how essential oils could be at the root of how neither Crystal nor her husband worked a 9-5 job, they had several kids -a couple of whom were homeschooling- and they seemed totally and ultimately fulfilled.
Back then I had absolutely ZERO understanding of concepts like team leadership in business, time leverage, facebook/instagram, social media marketing, companies with a mission/purpose, or essential oils and how they could support ED recovery✖️…...
….All I knew was that I needed to make a change or else I’d just keep working part/full time at empty jobs, not be able to #travel when I wanted to with my hubby, not be able to be #stayathomemom , not be able to go back to school if I wanted, not be able to foster a child one day, and most of all I needed to make a change because otherwise I’d be ignoring my call to service.
Not only have these little bottles of loveliness given me a whole toolkit to help people heal from their eating disorders and issues around food and body image (just like I did), they’ve also allowed me to learn about switching out toxic products that I was using everyday for 100% natural alternatives (deodorant, makeup, cleaner, etc)
I am beyond proud & SO grateful to be building a business full of people who have nothing but ❤️and a deep desire to heal and help others! 👊and get paid while doing it. 💴 .
Today was spent meal prepping. Why? -because if I don't plan ahead I dont always make the best food choices -we end up spending more money if I am not prepared and this girl wants to be debt free! -it will cut down on wasting food -focused mainly on breakfasts because that's the hard one for me
So what did I make that took all day in a rv kitchen?
1. Homemade granola
2. Banana coconut muffins. No sugar and low carb
3. Cranberry/orange muffins. Also no sugar and low carb
4. Egg breakfast muffins
5. Homemade taco seasoning
6. Sauce for an oriental dish I am making tomorrow

You won’t believe me if I tell you....
I often get asked how I am so happy all the time. Yes! I love being happy and I love happy! Of course we all have our moments, and have rough days, but I love joy, and finding a reason to be happy.
BUT, I was not always this happy. I used to be in an unhealthy marriage (surprise, I was married before!), constantly striving to find my happiness in material things, and everything and anything that wasn’t important. Crying on the daily, just so anxious and sinking into my bed with tears on my face and junk food in hand, feeling completely unimportant. Well, this habit also led to me gaining 80 pounds of weight from all the crap and emotional baggage. Sound familiar? Living with depression and anxiety? Unsure of yourself? Using food to cope? Absolutely destroying yourself with your thoughts?
Did you know UNHEALTHY RELATIONSHIPS can help push you towards those things? Why? Because if we are in an unhealthy or abusive relationship, we often times lose our voice and confidence without even realizing what is going on! And before we know it, we are drowning in Doritos, and ordered pizza. Fast food on the way home, and next thing you know, you’re overweight, unhappy, and hate that reflection you see in the mirror. This can be intimate relationships, with friends, with parents, coworkers. If we aren’t sure of ourselves and KNOW our worth, it is easy to allow those relationships to help us see a worse side of ourselves that really doesn’t exist!
But it DOESN’T have to be that way. I lived it. I have been there. Unhealthy relationship in life, leading to unhealthy relationship with food and myself. HATING MYSELF on the daily. The best thing that ever happened to me was waking UP and finding my voice. Finding my joy, and working every damn day to find my confidence.
So much unnecessary stress? GONE. Instead of fearing goals and dreams, I WELCOME them. Food? I still love food, but know a thing or two about balance. My health. I take pride in it and make ME a priority instead of everyone else. Joy? I seek it out every single day.

Today was a "do nothing" sort of day and it felt amazing! I painted with my cats, watered my plants, ate some good noms, and just took time to relax.

It never seizes to amaze me the amount of knowledge there is to gain about the world of healing plants. .
The moment you step out of your house, you are likely already stepping or right next to a plant that has so many healing benefits.
This morning I wanted to appreciate an herb that will soon be around everyone's yard and is the ultimate insect bite, some snake bites and blood poisoning herb.
Plantain (Plantago major) and not the banana type plantain, but the weed that is a common weed across North America. Plantain is considered the "green bandage" by many Herbalists for its incredible results externally applied and infused internally.
For Insect bites (Bees, Mosquitos, Wasps etc.) Simply bruise a fresh piece of the leaves, and wrap and hold on the effected area. .
A tea combined with a poultice can do wonders for blood poisoning and detoxification.

4 oz Kite Hill Everything Cream Cheese
1c almond milk
1/4c vegan yogurt
1/4c nutritional yeast
2 tbsp avocado oil
2 tbsp lemon juice
2 tsp fresh garlic, minced
1/2 tsp salt
Sauté garlic in oil over medium heat until fragrant
Reduce heat to low and add cream cheese. When it starts to melt, add all the remaining ingredients and whisk until smooth.
Toss with pasta and enjoy!

Feeling pretty great after accomplishing my first goal of my 30’s! 13.1 Miles / 21.1 Kilometers complete! Now, time for a nap...✨
As humans we are designed to cope with what life throws us, that’s why we have a fight or flight system built into our bodies to protect us from danger and pain. You’ll of probably had an experience where something frightening or painful happened and you went numb and actually don’t remember what happened clearly. This is our bodies way of protecting us in the moment. When you really think about every day worry and fear, most of it is tied up in the moments before an event or after. We fixate on our thoughts and start to experience physical and mental symptoms of something really upsetting before it’s actually happened, this can be exactly the same reaction after an event or moment too. What’s so important to remember is that as humans we are fully equipped to deal with these things and that the time we give to our worries and fears is only extending our discomfort and pain. Try and catch yourself in these fear building moments, these catastrophes we build inside our minds and see if we can be the witness rather than the victim. It’s super challenging but once you start to become aware of your habits around worry, we can actually start to untangle them. .
Move out freely into your day - fear the fear and do it anyway 💖 .

If you are emotionally tormented in any relationship - ie gaslighting, ghosting, manipulation, control, abuse of any kind, raging, stonewalling.. no amount of sophisticated, skilled communication and self assertiveness is going to cut it. The only way is to end it. Promptly.
And yes, it might be extremely complicated and difficult if your lives are enmeshed. And no doubt, you’ll need incredible support from 1 or more people you trust implicitly. The recovery will be harsh, but nothing in comparison to the brutality of being in a tormented dynamic.
This goes for dating as well. You don’t need to assert your needs when someone does any of the behaviors listed above. You end it before it gets started.
Because, you are extremely valuable and you matter. You are worthy whether you feel it or not.
End it. That’s how you assert yourself here. Bottle gardens, also known as terrariums, were in vogue back in the 60’s. David Latimer, a British man now in his 80’s, planted a bottle garden as an experiment on the Easter Sunday of 1960.
He took a ten-gallon vessel, he placed in some compost and then using a piece of wire lowered in a seedling. He poured in a quarter of a pint of water and sealed it.
What started as a way of spending the Sunday afternoon is still there after 55 years. However, the most extraordinary part of the story is not how old the garden is but the fact that David watered it only once since then, in 1972.
That is to say the garden was open and watered only once in 55 years! The bottle garden sits in the same place it has for the past 27 years.
How can this even be possible? To keep it simple, Mr Latimer’s bottle garden has created its own ecosystem. The transparent materials of a terrarium (plastic or glass) allow the light to enter and the plants within to photosynthesis, that is to say to transform sunlight into the energy they need to live.
The sealed container creates a small-scale water cycle: moister from both soil and plants evaporates, the water vapor condenses on the walls and then falls back down on the plants. This process constantly supplies water to the plants and prevents them to become over dry.
