I had some Filo leftover from the Spanakopita last night so mate up these little bundles. Apple chunks with cinnamon, nutmeg, sugar, plus the zest and juice from a lemon. Twisted up inside the pastry, placed in a muffin tin and baked in the @kamadojoeuk for around 30-40 mins
Not a massive fan of stewed apples, these were more for my wife but I'm gonna try them again with chocolate and hazelnuts... Have a feeling they'll be more up my street 😛

Lifting heavy things quite literally saved me.
The problem with teaching women that shrinking is good, is that it makes them want to disappear altogether. “Have you lost weight?!” “Ooooh skinny minnie!” and “Honestly you look tiny”. Hearing ‘compliments’ like these thrown about thoughtlessly makes me absolutely shudder. Shrinking is normalised so much that we don’t even realise we’re reinforcing it’s positive connotations. It seemed normal that I was shrinking, it’s good to lose weight though right? Even after admission to hospital I literally didn’t believe that I needed to stop shrinking.
“I think some big actors and musicians feel like they have to speak to their audience and that word [feminism] is confusing to their audience. But I don’t get it. That’s like someone being like, ‘I don’t really believe in cars, but I drive one every day and I love that it gets me places and makes life so much easier and faster and I don’t know what I would do without it.”
Why WHERE You Train Matters As Much As HOW You Train
A lot of time and focus is spent on the HOW and what type of exercise is ‘best’ for losing weight that we dismiss the importance of the WHERE we train that is:
And by environment I refer to the place and people within it.
I’ve had the opportunity now to train my coaching clients at @gymco_belfast for over two years and I mean it when I say that this is hands down the best fitness facility I’ve worked in:
The gym is well equipped.
The staff are welcoming and helpful.
The classes are motivating and challenging.
The members are all friendly and supportive.
But above all?
THIS environment is conducive to reaching your weight loss goals.
Because if I were to guess, I’d say that your WORKING environment isn’t that conducive to you achieving your weight loss goals.
Your work colleagues probably bombard you with temptation every day bringing in birthday cake, biscuits and takeaways.
I’d also guess that your HOME environment isn’t all that supportive of your goals either.
Your partner not understanding what your goals mean to you and even your parents making comments about how much weight you’ve lost.
THIS ALL MATTERS.
It matters because the GYM, is different.
You might have the current perception that the gym is a place full of pretentious, stuck up people.
When really, the gym is full of like minded people who are trying to achieve goals similar to yours.
What this creates is an environment that will help you reach your weight loss goals as you:
Build relationships in the exercise classes you go to.
Bring a gym buddy with you for extra accountability.
Work with a coach to accelerate your goals.
That’s why WHERE you train is as important as HOW you train.
Surround yourself with people who support you.
Surround yourself with people who challenge you.
Surround yourself with people who encourage you.

We also want to explore as many new places as possible this summer.
So there's a bit of a story behind tonight's cook.
There is a restaurant close to us who does a pretty awesome spinach cheese dip so I had a though of putting something similar inside filo pastry and rolling it up.
As we're heading to Greece soon, I've been looking at their cuisine and cooking some different things.
Then I stumble across spanakopita... A spinach and feta cheese filling in filo! Well I'll be damned.
So put this together as a bit of an experiment. Would have liked a bit more colour on it, and I think the filling needs an extra cheese of some description... But it was tasty.
I need to Shed a few pounds after eating @shedbelfast this evening. They have reinvented the menu and it's bigger and tastier than before swipe 👈 ⬅️ see for yourself and its open to the public tomorrow. Go try it it's simply moreish #shedbistrobelfast#shedreinvented

To the best of my knowledge it was ricotta and courgette fritters with heritage tomatoes, tzatziki, a poached egg, dill and lemon. Sublime!! This place is a MUST visit.

Ok so the sunset burger from @nandosuk is hands down the best burger they have on their menu 🙌🏽 It has chicken thighs with skin on instead of a breast (winner right there) and it makes all the difference 🤤 plus peri peri chips and garlic bread too obvs
5 WAYS TO BE MORE CONFIDENT 💪🏻❤️...
Hey you! Sometimes being confident is hard- especially when you’re putting yourself out there or taking risks so here’s my 5 best tips to fake it till you make it 🥰
1. Stop comparing yourself to others- especially on Instagram 🤳🏻People are always showing their best, this is a highlight reel!
2. Stand tall! Your posture is so important and can really contribute to how you feel about yourself.
3. SMILE 😃 Smile at strangers, smile at the bus man or just smile to your friends and family. Forcing yourself to smile will make you feel more positive and boost your confidence.
4. Self care ❤️ Take some time out of your day or your week to look after yourself and make sure you’re feeling good.
5. Set small goals to improve yourself 💪🏻Whether this is exercising more, being more chatty at school/ work or even just thinking more positive thoughts. Setting and achieving these small goals will help overcome any insecurities you might have.

I always find it really hard to switch off and not constantly be busy. When I’m out of work I’m always booking shoots or discussing collaborations but not this weekend! I’m having a well needed rest and watching multiple Disney movies 😂

A lot of people live their life looking forward to the weekend or summer or next year...
I’m definitely that person... 𝘧𝘰𝘳 𝘯𝘰𝘸 ! I’m currently working 9-6 Monday- Friday so I never really have time to spend time with my friends and family. This is why the weekends have meant so much to me this year! Shooting these photos with Matthew was honestly so much fun. I clearly can’t roller skate as well as I thought I could 😂 Days like these always make me realise that I don’t want to work 9-6 for the rest of my life! I definitely want to branch out and try different careers and find that balance that I so desperately need to spend time with my loved ones! 🥰

Hey! Every time I check my dms on here there’s always at least one asking for “photo ideas” or “things to post on Instagram” So here are 10 super easy post ideas so that you can connect with your followers on Instagram! 🥰

2. Who is close to you? - take a family photo or some pics with your friends and show us who is important to you ❣️

The KEY to success is...
Start before you’re ready! Stop waiting until you “have this” or “do this first” and just start.
