Some of my favorite plates that I have done over the last year or so. I sit here and reflect on the last 10 years or so of my career as this chapter has ended and the next is about to begin. Ups and downs, good times and tough times, and too many faces to remember. I look forward to a fresh start with a bit less headache. Gonna go grind with a friend of mine for a bit and see how that goes. A bit more upscale and new clientele. Looking forward to being pushed a bit, I’ve wanted to go a bit more upscale for a while. Chef PJ presents Chicken Tikka Masala. I took my first ever stab at Indian food. I’m actually embarrassed to say that. Indian cuisine is one of my favorites with some of the most powerful flavor profiles in the world. Hope to visit the country someday soon. Until then, I plan on attempting to whip up more dishes from that region. Thanks to the help of @asezhiyan92 and his step mom for the spices and recipe.
Beef 'Crumble' with Caramelised Onion Puree.
Braised short ribs, caramelised onion puree and crispy bacon crumb.
A savoury crumble might sound odd but it's a cool play on a traditional sweet crumble that tastes delicious.
I LOVE Chinese food, however, it’s near impossible to find plant-based options for it in my area which means I have to get creative and make things from scratch. I found this Crispy Orange Tofu recipe from @jillian.harris, added steamed broccoli, and served it alongside @eatbanza rice. Indulgent, scrumptious, and a healthier alternative? You can’t ask for much more than that.

We should make little canisters of MaD that you could wear around your neck. Or hold in your purse. So when a restaurant forgets to season the food. You could sprinkle some MaD. Then the food would step up a notch or two....It makes a difference Y’all. This steak was awesome. I added some salt and pepper and it was even better. If I would have had some MaD.
