In the US, when we think about pastrami we immediately connect that to Jewish deli meat but the name “pastrami” derives from the Romanian word “pastrama” which means to conserve food for long time.
And indeed it is thanks to late 19th century Romanian Jewish immigrants who brought pastrama in the US when they settled in New York’s Lower East Side.
There’s no evidence on when the term pastrama turned into pastrami but it can be similar to the Italian salame that turned to become salami.
Basically pastrami is smoked corned beef, where corned refers to beef that has been preserved through salt-curing.
And following tradition, the brisket, which is a beef cut taken from the breast section of the cow, is cured in a brine solution, seasoned with various spices and then slowly simmered until the meat is fully tender and flavorful.

Lola had a little Beef
Beef Wellington burger with aged beef, mushroom, pickled cabbage, watercress, & Garage Project Lola Cherry Cola jus in a puff pastry ‘bun’ with duck fat roasties. Matched with Garage Project Lola - Cherry Cola Dunkel.
Based on previous entries from Dockside, I was pretty sure we were in for a treat. We were shown to a great table, & ordered burgers & one beer match for the beer fan. I’m not generally a beer drinker myself, but I was intrigued by the concept of a Cherry Cola beer so dutifully sampled a wee bit. Sadly none of us were in love with this one – it had an after taste reminiscent of that cough mixture your mother fed you as a child, & I was quite happy I wasn’t responsible for polishing the vessel off!
On to the main event. Out it came looking impressive, with slices of luscious rare beef poking out from between the pastry tower. That’s right……pastry!
My first burger in this year’s WOAP was a delicious tasting pie which had clearly been doused in some Polyjuice potion to make it look like a burger (cheating in my books) but it at least held together and tasted great! This one however, was a structural & gastronomical disaster!
The flaky pastry immediately disintegrated after just the slightest touch of a knife – leaving messy pastry shards scattered everywhere. The pastry was stone cold, as was that beautiful looking rare beef, the cabbage, the mushrooms & the duxelle pate at the bottom of the b̶u̶r̶g̶e̶r̶ pie. This essentially left you with a mass of cold & slightly soggy items scattered across the plate that lacked any sort of flavour harmony, & was a visual cacophony.
To be fair to the chef the beef was perfectly rare and juicy, & the gravy that accompanied the duck fat roasties was beautifully flavoured (but also cold). The roasties on their own were hot enough, & nicely seasoned & crunchy. But the sum of the components of this b̶u̶r̶g̶e̶r̶ pie was sadly much greater than the whole, they would have been better off staying in the fridge.
At the end of consuming we looked back upon the beer, decided that in the scale of things that it really wasn’t that bad after all, & awarded an extra point. 3/10 #notaburger
Our little party last night was really nice, everyone enjoyed the goodies we made 🧡 and we had the best view over the city. Today is a good day for 🥞 and for the new Tarantino movie 🙈? Have you seen it? Can't wait to see it tonight.

Weekends deserve a special treat, right? ❤ I had so many plans and work to do for the weekend but things changed suddenly so we will just have a nice brunch and take a long walk 🙈 and I'm sharing the recipe for this lovely dutch baby, the best brunch idea.
160 ml milk
2-3 tbsp brown sugar
1/2 tsp grated nutmeg
1/2 cinnamon .
Preheat the oven 425 F/220°C and place a large, oven proof, skillet inside and let it in the oven while you are making the dutch baby. Mix the flour with the nutmeg and cinnamon. Beat the eggs until frothy, add the milk and sugar and beat again. Then add the flour mix and beat once more. Remove the skillet from the oven and add the butter, be careful with it, let the butter melt for a few seconds then add the batter and bake for about 20 min or until your dutch baby is super fluffy and golden. I love it with some maple syrup on top and some fresh berries ❤ .
