This week’s #SundaySpecial is Deckman’s in Valle de Guadalupe, Mexico. Located at the base of a mountain on a boutique winery, chef @bajafishingchef whips up some of the tastiest food in all of the Baja in a 100% outdoor kitchen. We ate the 6 course tasting menu with wine pairings. The best dish they serve is the quail legs (second to last picture) but everything they cook they knock out of the park. And you can’t write about this place without mentioning the ambiance. There is a reason this place wins award after award. They deserve their own Netflix special. Until next time, chef!

Spent our Sunday wearing fall bandanas and baking treats and tried not to think about how hot it will be tomorrow 😂😋 We’ve tried making treats before and it’s been a big fail (Mom is a horrible cook 🙈) However, these @kneadlovebakeshop cookies were super easy to make 🤩 It only took Mom about 10 minutes 🙌🏻 Her favorite part was Have your pawrents ever made cookies for you before? 💗

Sooooo.... I am having a special visitor over with a few dietary restrictions. They aren’t difficult at all, but it had me coming up with creative dinner ideas using as much of our own homestead sources so I stumbled upon on pumpkin and sage fettuccine. But then my oldest used the last of the half and half that the recipe had called for! 🤦🏼♀️ So I got even MORE creative and milked the goats and then used my old-timey crank operated cream separator and made a bunch of cream so I could have some for dinner... and then overestimated how much milk I would need. So now I have a gallon of cream and I extracted the last bit of cream from the separated milk to make a soft herbed goat cheese. My oldest got excited again and I caught him sneaking a literal handful 😂 I’m not actually complaining though- he is one of the pickiest eaters in the family and the fact that he enjoys it so much is a HUGE compliment! Maybe once our guest arrives, we will be able to make some butter... or ice cream? I’m still thinking on it. #homegrown#bountiful#farmfresh#madewithlove#goatcheese#fromscratch#bestcheeseever

Para a Massa
400g de farinha de trigo
10g de fermento biológico seco
75g de açúcar
180mL de leite morno
15g de manteiga
1 col (sopa) de oleo
Para o Recheio
100g de manteiga sem sal amolecida
1/2 xíc (chá) de açúcar
200g de coco ralado seco
Para a Calda
1 xíc (chá) de leite
3/4 xíc (chá) açúcar
Modo de Preparo
1 – Misture todos os ingredientes ate obter uma pastinha.
1- Misture os ingredientes numa panela e leve o fogo ate levantar fervura e ficar levemente encorpado.
1- Numa tigela, coloque a farinha de trigo, abra uma cavidade no centro, deposite o fermento, coloque um pouco do açúcar, verta metade do leite, faça um mingau e cubra a mistura com a farinha da lateral da tigela. Quando um racho se formar na superfície, adicione o restante do leite, os demais ingredientes e sove a massa por 10 minutos.
2- Modele uma bola, cubra e deixe crescer ate dobrar de volume.
3- Abra a massa em formato retangular, espalhe o recheio sobre a massa e enrole como se estivesse fechando um rocambole. Corte fatias de 3cm de largura e deposite-as numa assadeira antiaderente. Asse em forno pré aquecido a 200C por 25 minutos. Coxinha Sensação! A melhor coxinha doce da vida! ❤️Ingredientes
395g leite condensado
1 col (sopa) manteiga sem sal
3 col (sopa) Quick morango
1 col (sopa) creme de leite
50g chocolate branco
Modo de Preparo
1 - Numa panela média de fundo grosso, coloque o leite condensado, a manteiga, o creme de leite, o quick de morango e leve ao fogo médio, mexendo sempre com uma espátula de silicone, até que a massa desgrude do fundo da panela. Aumente o fogo, cozinhe por 4 minutos. Desligue o fogo, Junte o chocolate, incorpore-o, verta a mistura numa prato, cubra com plástico filme e leve à geladeira pra firmar.
Para o Brigadeiro Amargo
200g leite condensado
2 col (sopa) chocolate em pó
1 col (sopa) creme de leite
1 col (chá) de manteiga sem sal
25g chocolate amargo picado
Modo de Preparo
1- Numa panela média, coloque o leite condensado, o chocolate em pó, a manteiga, o creme de leite e leve ao fogo médio mexendo até que desgrude do fundo da panela. Nesta etapa, adicione o chocolate amargo picado e misture bem.
2 – Quando atingir o ponto, coloque o brigadeiro num prato, cubra imediatamente com plástico filme e leve para resfriar na geladeira até ficar firme.
1 – Separe pequenas porções do brigadeiro amargo e reserve. Pegue uma porção do brigadeiro bicho de lé, abra na palma da mão e deposite uma bola de brigadeiro amargo no centro. Com cuidado, feche as bordas da massa e faça um cone em formato da tradicional coxinha.
